What changed, and why it matters
This commit simply updates a timestamp and a matching minimum-data-version number used for Ethereum token and network definitions. It is a routine metadata refresh with no visible security relevance.

The change updates released-definitions-timestamp.txt from 2025-12-01 to 2026-01-10 and bumps MIN_DATA_VERSION in definitions_constants.py from 1764611524 (Unix time of the old timestamp) to 1768042093 (Unix time of the new timestamp). This tells the firmware to require newer Ethereum definition bundles. No code logic, parsing, cryptography, or access control is modified.
